Sesame-Ginger Swordfish

wow. so i bought swordfish on a whim this week. i don’t think i’ve ever even eaten swordfish before, so this was a complete experiment. if i were rachel ray i’d give this one a “YUMMO” .. thankfully, i am not rachel ray and i (hopefully) don’t use lame catchphrases like that too often… regardless, this one’s a keeper.

Broiled Sesame-Ginger Swordfish

Makes 1 (large) serving, saved half the fish for another use

Ingredients

• 1 8oz swordfish steak fillet
• 1 tsp olive oil
• 1 tsp ground ginger
• pinch salt & pepper
• 1 cup greens (spinach, arugla, etc)
• 1/4 cup bean sprouts
• 1 Tbs rice wine vinegar
• 1 Tbs tablespoons low-sodium soy sauce
• 1/2 Tbs minced fresh ginger
• 1 tsp dark sesame oil
• 1 teaspoon water
• sprinkle of Equal (used about 1/4 packet)
• 1 teaspoons sesame seeds, toasted
• 1 scallion chopped

Instructions

Rub small amount of oil over top and bottom of fish. Sprinkle with ginger, salt and pepper. Place on broiling pan and broil for 5 mins each side.

In small bowl, combine vinegar-Equal. Place sprouts and greens on plate, top with dressing. Meanwhile toast sesame seeds in small pan until fragrant.

Place swordfish on greens and top with sesame seeds and scallions.

I served mine w/ mixed veggies (this made plenty of dressing for entire plate, plus more)
