Simple Chocolate Chip Cookies

Living alone and knowing very well if I make a whole batch of cookies (especially chocolate chip), there’s a very good chance I will resurrect my childhood nic-name, “Cookie Monster”, I came up with a recipe that makes just one serving… one decadent, delicious, satisfying serving that’s full of healthful benefits and lacks all the junk you’d find in most sweet treats. I made these after my and they totally hit the spot.

Go ahead, indulge.

Simple Chocolate Chip Cookies
Ingredients

1/2 c Almond flour
1/4 tsp Sea salt
1/4 tsp Baking soda
1 TBS Olive oil
1 tsp vanilla extract
2 tsp agave nectar
1/4 c dark chocolate (broken up bar, chips, or combo)

Instructions

1. Combine dry ingredients in a large bowl
2. Stir together wet ingredients in a smaller bowl
3. Mix wet ingredients into dry, stir in chocolate.
4. Drop onto greased or silpat lined baking sheet
5. Bake at 350° for 8-10 minutes
6. Cool and serve

This yields 4 cookies… you can share, but I can’t imagine why you’d want to :)
