Dinner Tonight

I usually try to get both workouts done in the mornings, but the getting to/from the track always ends up taking longer than expected, plus I decided to stop at Safeway on the way home and pick up a few groceries to see me through the week. I went in planning to just quickly grab a cucumber, more lettuce, another zucchini and soy milk… but naturally I got swayed by some of their produce sales and ended up with 2 full bags… I went grocery shopping on Sunday for the week. Whoops. But, in my defense, I found some good deals like two packages of steak (for stir frying) for 50%. I froze one and decided to cook up the other this evening.

I got home from work and had a conference call before I could get my second workout in. Once that was done I grabbed a few ingredients that I always have on hand and made a quick marinade for the steak. I put the meat in a large bowl and added 1 TBS sesame oil, 1 tsp sesame seeds, small piece of grated ginger, 2 cloves garlic, 1 chopped scallion, and 1 Tsp Olive oil. I gave it a quick stir, put it back in the fridge, put on my helmet and was off. It was just a recovery workout and I went out and did loops on Hains Point. I stayed in my small chain ring only- totally relaxed and easy. Felt pretty good to spin my legs out after my run this morning. I spent most of it thinking about dinner. Let’s be honest, I spend a lot of my time thinking about food.

I got home, showered off quickly and got straight to the kitchen. It was later than I’d usually like to eat dinner, so time was of the essence. I needed quick. I chopped some broccoli and popped it in the microwave while I my grill pan was heating up. As soon as it was hot, I added the steak and sauteed about 3:00 each side. Meanwhile, I prepared the salad (recipe below) and got my hands dirty massaging the kale with a few drops of olive oil + sea salt.

All in about 10-15 minutes dinner was ready and on the table. Yum.

Summer Salad
Ingredients

• 1/2 c Cherry Tomatoes
• 1/2 c Yellow Squash
• 3 Large Basil Leaves
• 1 tsp Olive Oil
• 1 tsp Balsamic Vinegar
• Pinch salt + pepper

Instructions

Halve the tomatoes, chop the squash, and cut the basil into ribbons. Add remaining ingredients and toss together until combined. Simple & delicious.
