Steak part deux + turkey meatballs

My fridge is full and I’ve got more protein than I know what to do with! I cooked up a bunch of chicken Monday evening and I had lots of leftover steak from last night (it made 3-4 servings… well probably more like 3… i eat a lot).

Again, I only got one of my two workouts in before work, so I had to do my second workout in the evening. I stayed at work late tonight finishing up a project and was tempted to just be lazy and relax, but I’m so glad I made myself get to the gym. Wednesdays are strength day and I love them. As per usual, I started out with a quick set of weights and then moved onto the majority of my workout: core + abs. I love it. I felt good and productive.

Got home, showered off and again– straight to the kitchen. I put a few handfuls of kale in a large skillet and just let it go. I chopped up some green onion and added some fresh garlic and stirred every few minutes. I cut up a head of broccoli and poured half a bag of frozen stir fry veggies into a bowl and popped it in the microwave. Once the veggies were done, I added them to the pan along with the steak. I added some ginger-soy marinade and a squeeze of lime and stirred until combined. I topped it with a sprinkle of sesame seeds.

Voila.

I was feeling extra ambitious tonight and decided to go ahead and cook up the package of lean ground turkey I had thawing in the refrigerator. I have a tried and true method of making healthy meatballs, so it was quick and easy to prepare. I most likely won’t eat them this week (I have so much pre-cooked protein that needs to be eaten), but I can freeze them and have a quick go-to meal when I need one. I’ll post the recipe tomorrow… for now, I need to sleep.
